You should pick the race that most appeals to you and none other since any ultimate class will not be using racial skills. No end game PvE build uses racial skills and PvP doesnt have access. But there are presently three racial skills that ive seen used in WvW.
Hitboxes and movement speed are the same for every race. The only difference I know of, is the fact that skills used by asura appear smaller then they really are. That means that an asuran ele that breathes fire would hit you, even if you would stand just outside of the fire effect. This should, however, only make a difference in PvP and WvW.
